Executive chef creates menu inspired by his own experiences of the benefits of a plant-based diet
Over the past few years, resorts in the Maldives have been increasing the range of menus for travellers who adhere to a plant-based lifestyle, who previously faced rather limited options here. While it’s still relatively rare to find a resort in the Maldives with an extensive plant-based menu, a few of them – particularly the high-end resorts – are now stepping up to provide a decent range of options for vegans and vegetarians in the Maldives.
Dusit Thani resort in Baa Atoll is prime example, having just launched SALA restaurant which exclusively specialises in organic, nutrient-rich, plant-based dining. It’s located on the upper floor of a Thai-style pavilion overlooking the glittering ocean.
With ‘plant-powered goodness’ being the mantra at SALA, the menus feature top-quality locally-grown ingredients crafted with the finest locally sourced ingredients and homegrown produce from the resort’s own organic gardens.
SALA’s Executive Chef Jan Van de Voorde, who has previously worked in Michelin-starred kitchens in Belgium and the Netherlands as well as boutique health retreats in Ibiza, said: “The inspiration for SALA comes from my time in Ibiza from 2020 to 2022, where I embraced plant-based cuisine and experienced its transformative benefits.
“Cooking and consuming this way revitalised my mind and body—I felt stronger, healthier, and more
energised. Now, I am thrilled to bring this philosophy to Dusit Thani Maldives, where guests can
indulge in flavourful dishes that nourish the soul.”
You can try dishes such as Grilled King Oyster Mushroom served with a nutrient-rich pea puree, Creamy Mushroom Soup enhanced with white truffle oil, and Coconut Sorbet made with locally sourced coconuts and seasonal berries. Beverages include the probiotic-packed Kombucha Mojito and the zesty Pineapple & Ginger Kefir.
